Ormond Beach- Fresh off the heels of their collaboration with Gainesville’s Swamp Head Brewery, Jen Hawkins from Tomoka Brewery announced on the new Brew Blog that construction is developing, licensing is progressing, a soft opening is coming along, and more collaboration beers are in the works. As it stands, a brewery who is unlicensed cannot brew its own beer and serve it commercially. However Florida has generous breweries and collaborative spirit, so in many cases, licensed breweries will help give the future brewery a chance to brew on their system with their brewers, thus collaboration beers are born.
Currently, Tomoka Brewery has announced Agrio Oscuro, “a Mexicola American sour. Its a sour mash beer with pilsner malt and debittered black malt. Lightly hopped for 5 IBU. It will be paired with Mexicola syrup, made with cola, agave nectar, sugar, lime, and mint.” Agrio was brewed at Swamp Head on June 7th and should be on tap at both Tomoka and Swamp Head simultaneously, when Tomoka Brewery opens. According to this recent entry, that opening is looking like July 3rd.
