Odd Breed Wild Ales announces the release of Fresh Off the Farm with Starfruit
“This Friday, bottles of Fresh Off The Farm with Starfruit go on sale. Odd Breed recently posted to social media pics of brewery staff manually washing and slicing 300 pounds of starfruit one year ago in July of 2021. After two months of refermenting the fruit to dryness and 10 months of bottle conditioning, this wild ale loaded with fresh local fruit is ready for your enjoyment.”

Whenever taproom visitors (and brewers) see the volume of fruit we are processing by hand, I get comments about how I should use purée because it will be a lot quicker and easier. And they are right. Processing fresh tropical fruit by hand is not easy. It takes a lot of time, it’s messy, and my hands are usually sore for a few days after.
When my friend (and former Odd Breed Bartender) Scott told me he could help source some starfruit, I of course told him I’m interested. And he was able to deliver 300 pounds of fresh starfruit from his neighbors’ trees over a few days. Once we acquired enough fruit for the beer, it was time to start sorting the fruit according to ripeness. Fruit that was ripe or slightly overripe was moved into our walk-in cooler to keep it fresh. Fruit that wasn’t quite ready was left to ripen at room temperature for 1-3 days.
We used two cultivars of starfruit. There are many hybrid cultivars of starfruit, and unfortunately, we don’t know the exact name of the two we used. However, the two main types are sweet and tart, and we used a combination of both. I think combining two distinct cultivars can lead to a more interesting and complex flavor profile. To pair with the fruit, I chose a Lambic-inspired wild ale that spent 14 months in a French oak puncheon. Starfruit lends subtle tangy and tropical aromatics with white grape and pear on the palate. The finish is smooth, tannic, and oaky with soft acidity and our signature Odd Breed funk. This one is especially easy drinking yet incredibly nuanced, with each sip presenting a new layer of flavor and complexity.
This wild ale was packaged in 750ml green Champagne bottles with a 100% natural cork and crown cap on September 10th of 2021. 10 months of natural bottle conditioning yields enhanced aroma and tiny bubbles. This beer is ready to drink now, but will continue to evolve for the years to come.Fresh Off The Farm with Starfruit goes on sale on the Oznr app at Noon on Friday, and bottles are $31.
