Due South Brewing and Wicked Dolphin Rum team up

Due South Brewing is tapping Rum-Barrel-Aged Mariana Trench on August 24th

Press Release: Florida’s award-winning Craft Rum Producer, Wicked Dolphin, has just partnered with one of Florida’s award-winning Brewer, Due South Brewing Co., in Boynton Beach, Florida to create an awesome addition to their rum, Wicked Dolphin Brewer’s Series – Due South Brewing.

Wicked Dolphin Brewers Series combines Florida’s Craft Rum with some of Florida’s top craft breweries. The second in the series partners Wicked Dolphin Rum with Due South Brewery out of Boynton Beach.
Oak barrels that once held premium American Bourbon, before aging Wicked Dolphin Rum for two years, were filled by Due South Brewery with their Mariana Trench Imperial Stout a tropical style stout. Brewed with chocolate malts and roasted barley. The barrels were then given back to Wicked Dolphin to be filled once more with their award-winning rum, this time absorbing the stout notes remaining in the oak of the barrel.
Wicked Dolphin’s Brewer’s Rum series with Due South has produced wonderful aged rum with a soft nose, warm notes from premium Florida sugarcane maturing in American Oak barrels with tastes of vanilla, and cocoa with a light finish.

Life of a Wicked Dolphin Brewers Barrel: 3 years Bourbon, 2 years Wicked Dolphin Rum, 1 year 2 months in Mariana Trench Imperial Stout barrels, then Back to Wicked Dolphin Distillery to be filled with rum and set to age another year.
“At Wicked Dolphin, we love experimenting. A lot of the team was brewing beer well before distilling rum, so the Brewer’s Series is a natural fit for us. We have some great breweries working with us throughout Florida, and we’re going to have some fantastic rum. What better way to partner with a great Brewery like Due South Brewing.”, stated Wicked Dolphin Rum owner, JoAnn Elardo.
With the release of Wicked Dolphin’s Brewer’s Series, You will be able to find this at Total Wine at 850 N Congress Ave, Boynton Beach this Saturday with Distiller Paul from Noon – 3 p.m. or at the Brass Tap Boynton Beach from 4 p.m. to 7 p.m.

Due South Brewing releases Citrafied – a Citra pale ale

Press Release: Due South Brewing Company has released a new core brand – Citrafied – that will be available year-round at the Due South tap room and throughout their distribution network. It will be available on draft and in 12 ounce cans beginning late November in bars, restaurants, and retail locations across South Florida and in December throughout most of the state of Florida.

Citrafied was crafted out of an almost year-long process of experimentation and iterations, honing in on the perfect combination of hops and malts. It began with a series of consumer-driven blind tasting events, where owner and head brewer Mike Halker guided customers through a collection of hop varietal focused pale ales. After each panel, the preference was clear, and the brewing team went to work creating a pale ale that would focus on Citra hops.

“We tried a lot of different hops,” Halker says. “There was a clear winner… we decided to make the clear winner available to everyone.”

The beer pours with a golden vibrancy and produces an incredible aroma of tangerine and orange peel. A clean and crisp flavor profile and finish help to accentuate the refreshing nature of the beer, which makes it both approachable and incredibly satisfying.

“The idea was to focus on the flavor profile,” he continues, “to create a beer that is hoppy but not overly bitter. We structured this pale ale around a balanced profile with a moderate alcohol content in order to craft something that would be great for all of the outdoor activities that South Florida has to offer. For me, I consider it the perfect beach and pool beer.”

The response thus far in the tasting room preview has been incredibly positive, with many customers anticipating the full roll out of canned package and its availability in the retail market.

The pale ale, which comes in at 5.1% alcohol by volume, will round out the year-round portfolio of Due South Brewing Company, joining Category 3 IPA, Category 5 IPA, and Caramel Cream Ale.

Due South Brewing brewer awarded John Doble Scholarship

Press Release: Joel Kodner, from Due South Brewing Co. in Boynton Beach, was awarded the John G Doble III Memorial Scholarship from the Florida Brewers Guild on March 5, 2016. Joel was the only recipient selected from a pool of qualified candidates from across the state who applied for this scholarship to attend the World Brewing Academy Concise Course in Brewing Technology at the Seibel Institute of Technology in Illinois. This is an annual scholarship awarded to one person each year.

Joel’s career at Due South began on its opening day in 2012 as a part time bartender with a full time accounting job elsewhere. Not long after, driven by his passion for the brewery business, he joined the brewing operations full time. His hard work and determination in the craft beer industry has earned him respect amongst his peers and advanced his position at Due South. He is now a brewer and the Brewhouse Manager at Due South, which produces approximately 15,000 gallons of beer each month to supply over 1,000 Florida retailers with locally made craft beer.

“Joel has been an asset at Due South since the day he arrived,” said Mike Halker, founder and president of Due South. “His work ethic alone attracted our attention. The passion he has for the industry is the icing on the cake. We’re extremely proud to have him running the brewhouse here at Due South.”

Joel can be seen in action most weekdays (the tap room is closed Mondays) slinging grain and hops in the brewhouse at Due South.

About the John Doble Scholarship
