December 10th was a historic day in Hourglass history as we officially launched Sourglass Brewing! The Sourglass Brewing line will be the home of our traditionally fermented wild and mixed cultured ales! To kick off the launch, we released our first Souglass beer, Lost Creek Saison, brewed as an ode to Lost Creek Lake, which is a beautiful place in Southern Oregon where Manzanita trees line a cliff overlooking the lake.

 

This farmhouse ale includes berries and flowers of the Manzanita tree that were added prior to fermentation in an oak foeder with our house blend of traditional and wild yeast. Lost Creek was matured on toasted Manzanita wood before bottle conditioning.

Expect a sparkling, dry ale with spicy, floral, and cider notes, some barnyard funk, and a smooth wood finish. We hope you enjoy this beer as much as we enjoyed making it!

Sourglass Brewing Foeder

With the Sourglass launch and release of Lost Creek Saison, Hourglass Brewing will become the first producers of foeder aged beers in Orlando! This American hand-crafted oak foeder will play an integral part of the Sourglass Brewing program, specifically as a fermentation vessel for wild farmhouse ales.

The unique “egg” shape of this foeder also plays a key role in Sourglass beers. Geometry affects yeast performance, ester production, and phenols, all of which can dictate the flavors found in beer.

Foeders allow a slight bit of oxygen into the beer over time due to the contraction and expansion of the oak. The wild farmhouse ales that comes out of this Foeder will be naturally carbonated and will acquire a subtle nuanced flavor from the oak foeder itself.

Hourglass Brewery on new beers and changes

Hourglass Brewery of Longwood has been announcing changes and new beers for some time now.  Recently, the Orlando-area brewery posted some news and updates regarding their future in Longwood and upcoming beers.

Hourglass is growing! We are currently undergoing another phase of expansion and have recently landed and installed a new canning line. Initial brands in cans will be our Frankie Rock Bavarian Style Hefeweizen and Brown Beer, Brown Beer, What Do You See? English Style Brown Ale. Our Launch format will be 16 oz – 4 packs coming later this month!

We have also have our 8th bottle release available at the taproom and in distrobution. Stormgazer, a dark English style Barleywine aged in Rum barrels with lime and ginger is the first of three beers in a cocktail inspired series. 750 mL bottles are on sale now for $18.00

Additionally, our new 20 bbl Egg Oak Foeder has arrived in further development of our Wild and Sour beer program. This will be our primary home for fermentation of our house saison and other interesting variant wild ales. Be on the lookout for our first barrel fermented sour releases in the fall as well.

Finally, since a lot has been growing and changing, we are reorganizing brands under the umbrella of Hourglass Brewing. The Hourglass Brewery will remain at our original location, and future wild and sour releases will be released under the identity of “Sourglass Brewing”. We feel this will help delineate releases and make customers more aware of our product differences, and are relaunching our new branding and logo set with our recent release of Stormgazer – a dark English Barleywine aged in rum barrels with charred ginger and lime.

Hourglass Brewery is releasing three wild ales in May

Hourglass Brewery now apparently has the bottle release down to an art and they are working out more of them in the future. For now, according to the brewery newsletter:

the big news for May on the beer front is that we’re simultaneously releasing three beers in our Wild Ale Series on May 21st.

Each of the three wild ales were bottle conditioned with champagne yeast, and embody a dry, funky flavor. These are wild ales, not sours. While the beers certainly have a funky profile reminiscent of sours, the difference in the acidity levels — the wild ales are not acidic.

Each bottle was labeled, filled, corked, and caged by hand at the brewery!

The three wild ales are:
Wild Hare Wild Ale (9% ABV) – Golden ale with brettanomyces and organic, locally grown persimmon and roselle. We brewed this in collaboration with Wild Hare Kitchen And Garden Emporium.
White Gold! (8.5% ABV) – Golden ale with brettanomyces, white pepper, and white sage.
Tereré Saison (8% ABV) – Belgian saison brewed with yerba mate and lime and fermented with a traditional saison yeast and brettanomyces.
The Wild Ale Series will be available for purchase on May 21st. $15/each. There are less than 400 bottles of each. Limit of 4 per person per flavor. When you buy 3 wild beers you can get a 4th Hourglass bottle from any of our previous releases for just $10 (choice between Nutsquasher, La Fe Dragee, and Cloudberry).

May will also include another sour IPA release, a brand new Maibock, which will be the first large batch lager from Hourglass, and the start of a themed Belgian Trappist style series!

Hourglass Brewery has two new beers and expansion news

The Hourglass Brewery of Longwood is definitely working to keep momentum going. The Orlando-area brewery has announced two new beer for April and some further talk on their expansion.

We will also be tapping a couple of NEW BEERS in April:

Beatrijs, a Belgian Dubbel ale, brewed with European Red Gooseberries. Gooseberries are a very popular fruit in Belgium and are prized for their natural tartness, similar in character to a currant. It is named for the legend of the nun Beatrijs, considered one of the greatest masterpieces of Middle Dutch Literature.

Foreelzies, our new Strawberry Ale, brewed with 10 lbs per bbl of 100% fresh strawberries. The result is a refreshing wheat ale with a dry but distinct strawberry character.

Not to be outdone, Hourglass is now talking about a larger distribution footprint as well:

Speaking of new beer, the brewery expansion is well underway! If you’ve been in the taproom recently, you may have noticed the new (and HUGE) tanks that were recently installed. Because of the added production capacity, our beer is going out at an unprecedented volume! We have Hourglass beer being distributed across Florida.

The Hourglass Brewery to release Nut Squasher Bourbon Barrel Autumn Ale

The Hourglass Brewery continues rocking out great beers from their Longwood home. The next bottle release from the Hourglass is coming Saturday, November 21st.

On Saturday at 11am, we will release our second bottle ever, and it’s a good one! Nut Squasher is an 8.4% autumn ale, unspiced, and aged in Bourbon barrels.

It showcases the piquant sweetness of fresh roasted butternut squash and the unique, creamy bitterness of the brazil nut. Each glass greets you with notes of vanilla, a savory autumnal tang, and a gentle boozy caramel, rounded by the deep, warm woodiness imparted by a lengthy rest in second use Bourbon barrels.

Nut Squasher features label art by our own in-house artist, and longtime employee, Jeremy Gonzalez. This is an event you don’t want to miss! See you Saturday!

Hourglass Brewery bottles Schizandra

The Hourglass Brewery of Longwood has completed an expansion and is now ready to move to another milestone: the first bottle release. For this release, the Hourglass crew is introducing Schizandra, a bourbon-barrel cherry-aged quad.

From Hourglass Brewery:

Our first bottle release will be Schizandra- one of our highest rated beers ever. This decadent ale is a Belgian quad aged in bourbon barrels on top of tart cherries. Savory tastes and smells of raisins, rich toffee, plums, and tart cherries are gently blanketed by oak and vanilla with a bourbon backbone. Coming in at 10.5%, this gentle sipper is not one to be taken lightly. With smooth, well-balanced drinkability, it is best advised to take your time and savor the flavor.
