Recorded in September of 2021, this episode of the BeerWise podcast features Nick Walker of Ology Brewing. Florida Beer News editor Mark DeNote talks to Nick about Ology’s growth and after the show was recorded, Nick dropped the bombshell that Ology would be the next tenants of Angry Chair Brewing’s Florida Avenue location. In the episode, he simply teases the reveal, but after it was recorded, Nick and company were kind enough to allow Florida Beer News to release the information first.

Nick Walker is the founder and co-owner of Ology Brewing Company the versatile and bustling brewery that claims the title of Tallahassee’s fourth brewery in opening, but is quickly becoming the largest brewery in operation with three locations in Florida’s capital city and plans to move into the spot vacated by Angry Chair Brewing in Tampa’s Seminole Heights neighborhood.

Ology Brewing opens third location in Tallahassee

Tallahassee’s craft beer scene continues to grow, despite COVID-19 and the challenges of doing business during the current quarantine.  The brewery continues to work with the current parameters on takeout service and has been making hand sanitizer as well.  The brewery announced that Tuesday they shipped 2,500 gallons of hand sanitizer to the State of Florida.

Tallahassee, please virtually celebrate with us as we announce the opening of our third location!

This Saturday, April 18th, Ology [Northside] will begin offering Curbside Pickup.

This location will be our largest yet, featuring a brewery and taproom, distillery storefront and the exciting return of Ology FoodLab as a permanent kitchen! We had big plans to have a Grand Opening for the taproom and kitchen; but, for health and safety reasons due to COVID-19, this has been delayed.

So for now, we will open the new location as a convenient Curbside Pickup location for Northside residents starting this Saturday (April 18th). We really wish we could invite you in and show you the space as we continue construction, but until we can party on the inside, we hope you will order at ologybrewing.com and come see us with curbside pickup this Saturday!

To kick off the celebration, we’ll be releasing bottles of our Irrefutable Logic: Maple and Black Walnut Imperial Stout, aged in Willett Rye Barrels. Sweet, rich maple syrup meets thick imperial stout with rye barrel notes and black walnuts to round out the flavor. Limit 1 bottle per person as supply is very limited. If that isn’t exciting enough, we’re also releasing cans of Heliocentric Distortion, our Hazy Double IPA that won first place at @BestFloridaBeer!

You can purchase both of these releases, along with our usual cans, beginning THIS Saturday, April 18th, at 8am at ologybrewing.com (select “Northside Order” for pickup location). Curbside Pickup will continue to remain available at Ology [Midtown] as well.

From now on Ology Distilling will also be giving out a FREE 2oz hand sanitizer with each online beer order.

Ology Brewing is releasing Berry Lactose Berliner on September 12th

Tallahassee’s Ology Brewing originally announced the release of two different canned beers coming this week – however, due to some logistics mixups, Berry Lactose Berliner only will be dropping on Thursday, September 12th.

We have some BAD NEWS and some GOOD NEWS, first the bad…

The BAD News:

We will not have DDH Sensory Overload (Galaxy) cans available on Thursday (9/12/19) due to some logistics mistakes on our part, which we are immensely sorry for.

With our first brews into new tanks and aggressive dry-hopping, this beer yielded a bit less than we were expecting — basically, the hops soaked up more liquid than we’d planned.

We then kegged off more of the beer than we should have given the lower yield prior to our canning run today. This left very little of the beer to be canned, so when we started our doing so today, we quickly found there wasn’t much beer left to be released.

The GOOD News:

We got all the Berry Lactose Berliner cans that we expected, and we will be releasing those cans as scheduled on Thursday (9/12/19) at 4pm!

These Berliner cans are straight berry juice, clocking in at 8%. Yep, you read that correctly, eight percent!!! We fermented this beauty on a significant amount of Raspberry, Blackberry, and Strawberry to create beautiful color, aroma, and flavor that is out of this world.

Again we apologize for not having the DDH Sensory Overload (Galaxy) in cans for you tomorrow in Tallahassee, but if you are in Minneapolis, MN you can find a few kegs of this beer out and about at some of your favorite craft beer bars.

We are constantly pushing the limits as a company, and as we grow we will definitely make mistakes. When we do, we will own them and work to implement solutions to prevent them in the future. In this case, we will be implementing some updated cellaring procedures, adapting our communications and improving how we estimate what our total yield will be on these heavily-hopped Hazy IPAs that we love to make (and drink!).

As a company we have a little internal mantra, “Evolve or Die,” and this experience will definitely push us to evolve to better our processes to ensure that we don’t run into this issue again.

These cans are in fairly limited quantity and may not last the entire weekend. Don’t sleep on these beauties.
