When Orlando’s Zymarium Meadery opened in the Winter Park area, it was a unique space that indicated it was not finished. Now, the meadery announces that it is opening Phase 2, a multi-purpose space called RīZōM.
We’re so excited to welcome you to “Phase 2” of the meadery, the opening of a new multi-purpose space called RīZōM at Zymarium Meadery, spearheaded by artist and Zymarium co-owner Ginger Leigh (aka @synthestruct ). RīZōM is a separate space, adjacent to Zymarium’s main taproom, which will open Friday, June 28th and feature curated experiences from local artists, educational events, and more. The name stems from “rhizome”, a continuously growing underground root system, as a nod to Synthestruct’s vision of the space as a place to build communities centered around new experiences and creative expressions.
To celebrate the opening of the new space as a hub for creativity, workshops, community events, and more, Synthestruct’s Light Installation INTRASPECTION will be featured at RīZōM at Zymarium Meadery and open to guests (ages 21+) Friday + Saturday nights 6pm-midnight starting June 28th. The immersive installation, which debuted in 2020 at Dazzling Nights at Leu Gardens – and as a part of Creative City Project’s IMMERSE event in Downtown Orlando – will take on a new form that includes a hypnotic audio + visual experience comprised of lights and audio composed with modular synths.

Zymarium Meadery is an award-winning meadery focusing on using local honey, unique flavors, and quality ingredients. We make all of our meads onsite, just 20 feet from the taproom where they’re served.
Since a mead can never be better than the quality of its ingredients, we use only the best honey we can find. We source our honey from as many local sources as we can, usually within two hours of Orlando, ensuring that our our meads are not only hyper local, but the money goes back to growing local hives and bee population (drink mead, save the bees!). We only use honey that has not been heated ensuring that the volatile aromatics and enzymes of the honey are preserved. Our local honey is unfiltered, just like our meads, to preserve the local pollen.
We take a modern approach to mead making, applying all the latest science of both wine- and beer-making to ensure our meads unlock the true potential of the honey while focusing on continually exploring new flavor profiles, taking full advantage of the fact that all honey tastes different!
